Make Something Monday: Blackbean Chili
Poorman's Blackbean Chili
Ingredients:Bush's Black Beans 1 can
Del Monte Gold and White Corn 1 can
Diced Tomatoes with Green Chilis 1 can
Instant Rice
(you can double this, but this made plenty.. plus some for us)
Directions:
1. Combine all the ingredients in stove top dish. Cook over medium heat for 10-13 minutes
2. Meanwhile, prepare rice according to the package directions
3. Serve over rice!
So simple and CHEAP!!!

That definately looks great on a cold day like today--and healthy too! I think I'm going to try this with brown rice for the extra nutrients!

I like to keep a can of tomatoes and chilis on hand for when I cook beans. I throw it in at the end for a little extra flavor.
