Make Something Monday: Mexican Lasagna

Monday, March 30, 2009 Posted by Felicia

I'm sorry this Make Something Monday is up late. I haven't been feeling all that great!

Mexican Lasagna

Ingredients:
  • 2 tbsp. chopped cilantro
  • 1 chopped tomato(es)
  • 1 can Black Beans
  • 1 can Green Chiles
  • 1 package Whole Wheat Flour Tortillas
  • 1 cup Medium Salsa
  • 1 can Refried Beans
  • 2 cups Shredded 4-Cheese Mexican Cheese
  • 1/2 tsp. Minced Garlic
  • 2 Chicken Breasts
Preparation:
  1. Cook the chicken breasts. Chop them into small pieces.

  2. In one bowl, mix refried beans, garlic and 1/2 cup salsa. Set aside.

  3. In second bowl, mix black beans, chicken, green chiles, cilantro, tomato and 1/2 cup salsa.

  4. In a 9 x 13 baking dish, spray with cooking spray and line the bottom with tortillas. Spread a layer of the refried bean mixture, sprinkle with cheese and top with tortillas. Cover tortillas with a layer of the beans/chicken mixture and sprinkle with more cheese. Continue layers until the final layer of tortillas is covered with refried beans and cheese.

  5. Bake at 350 for about 30-45 minutes until heated through.
I got this recipe from the Funny Spoon! Love that site! Remember, if you are participating in Make Something Monday to leave a link to Go Graham Go and Jolly Mom. There is a clickable link you can grab from my sidebar as well!

So yummy, we love Mexican. This recipe is like the below which Melinda makes often:

Chicken and Black Bean Tortilla Stack
    4 Burrito size Tortillas

    1 can refried beans

1 can of black beans, rinsed and drained

3-4 chicken breasts, diced and cooked, seasoned with Cumin, oregano, salt and pepper, garlic powder

1 cup shredded cheese (pizza blend is what we use) plus ½ cup additional cheese for topping

    1 cup salsa

on a baking sheet lined with foil place 1 tortilla, spread 1/3 of refried beans then 1/3 black beans then 1/3 chicken then 1/3 cheese then 1/3 salsa all over to edges.
Repeat until all ingredients have been used and you end with a plain tortilla

Sprinkle additional cheese on top, Bake at 350 degrees for 20 minutes or until HOT

Garnish with sour cream, green onions, side of rice or ice cold margaritas LOL

Yum!! I've made a mexican lasagna very similar to that! Actually, it freezes quite well and was great to have on hand after my 2nd son was born!

We also make our own refried beans...so yummy, which you could add in this: http://www.savingcentswithsense.net/2009/03/ultimate-recipe-swap-homemade-refried.html

    Hope you feel better!
