Atkins. More than a diet method...

I have never really been one for diet plans or methods, but I have always been about trying to eat healthy and finding foods that help me instead of hinder (besides my addiction to brownies). Well, now I can even have brownies that are a "healthier" option than before with the Atkins line of Cuisine foods.

Mom Central introduced me to the All Purpose Baking Mix and Penne Pasta by Atkins. Of course, they both have less carbohydrates than regular baking mix and pasta and they both still have a great taste and are easy to use. Now, if you are currently following the Atkins diet you are going to want to take note of which phase these products are in before using them. The Baking Mix is good for those in Phases 2-4, but the Penne Pasta is only for those in Phase 4. If you are like me, and are not a part of the Atkins diet plan, you can use any of it when you like.

To make things even sweeter, Atkins is holding a recipe contest! Just head over to the Atkins Community and enter your recipe (by the 30th of September) using the Cuisine foods to have a chance at some prizes!

Here's my quick and easy recipe using the Atkins Penne Pasta:


Ingredients:

Half box of Atkins Penne Pasta
1 Tomato (I used a Cherokee Red...yum!)
Handful of chopped Green Onions
Olive Oil to taste
2 Cans of White Meat Chicken (I used regular sized cans because they were on sale. You could get away with just one of the bigger cans.)
Parmesan Cheese to taste
1 tbl of Minced Sun Dried Tomatoes
Dash of Parsley to taste

Instructions:

Prepare your Atkins Penne Pasta as directed and set aside.

Add green onions, olive oil, parsley, tomatoes, and minced sun dried tomatoes to pan over medium heat. Saute until the onions look like they are a good texture. Add chicken and let simmer for a few minutes.

Pour all of this on top of the pasta and add Parmesan cheese as you like. I also add a little bit of Olive Oil over top to give it a better texture.
