Easy Avocado Sandwich Recipe {with yummy homemade dressing}!
Sometimes I get the hugest cravings for Avocado (no, I'm not pregnant.. but I still get cravings.. come on ya'll ... we all do), but I always struggle with what to do with it. I recently have been making this yummy combination that works out great and is super easy! So, if you love Avocados, here's another recipe to add to your pile!

Ingredients:
Avocado (sliced long)
Tomato (sliced thin)
Alfalfa Sprouts
Bread (your favorite kind...I use Italian Deli)
Mayo
Mustard (your favorite kind)
Red Wine and Vinegar Dressing
Instructions:
The "dressing": Mix a spoonful of mayo, mustard and add about a tablespoon of the Red Wine and Vinegar Dressing and mix well. Spread your dressing mixture over your two slices of bread. Add your sprouts to one slice of bread to make a nice bed for the avocado and tomatoes! Place your avocado slices across the sprouts and layer the tomatoes last (help hold the avocado on your sandwich). Add your last slice of bread and enjoy!
I can usually make this delicious sandwich for less than $5 and it makes about two per avocado. This works out great for me because no one else in my house likes avocado! I save what is left over and take it to work or eat it the next day.
TIP: Keep your avocado green by squirting some lemon juice over it before refrigerating!

OMG I get avocado cravings too! YOur sandwich looks delish and I am sure i will try it. I do avocados several ways. I love guacamole and make it often. I also make an avocado cream that is just avocados and sour cream with a little lemon and salt/pepper. I like eating avocados smushed in white rice. I love avocados with tortillas and cheese. YUMMO Now I am so hungry!

that DOES look fabulous! great photo! we eat avocados almost daily at our home -- inside quesadillas, tacos, or as a simple side dish to chicken. but one of my kid's favorite breakfast meals is: toast with light butter, sliced avocado, sprinkled salt & basil, and one piece of muenster cheese. pop that in the toaster over for a few seconds -- voila! the cheese and avocado are so good together (if not lowfat). :)

That sandwich looks tasty! There is always yummy Guacamole Dip:
GUACAMOLE DIP
2 avocados, peeled
1/3 cup onion, chopped
1/2 jalapeno chile pepper, chopped fine
1 medium tomato, peeled and quartered
1 tablespoon lime juice
1 1/4 teaspoons sugar
1/4 cup sour cream
Prepare all ingredients. Place the avocados, onions, jalepeno, tomato, and lime juice in a food processor and process on pulse till blended. Add sugar and sour cream and mix well. Place pit from avocado back into bowl to prevent browning.
If you want a chunkier guacamole, mash the avocado by hand with a fork, then add the other ingredients.

Avocados are the best - but it's hard to find good Avocados here in the midwest; they are either green green or black and way over ripe. Are there tips for ripening the green ones?

This sounds delish! I would sprinkle sea salt and pepper on the tomato slices as well! I have a few hard avocados so I will try this one out!
