What's Your Spring Time Comfort Food? Tomato Sandwich Recipe
Ingredients:
One large ripe tomato peeled and sliced to the thickness you desire
Texas Toast bread
Mayo
Salt
Pepper
Your favorite cheese
Preparation:
Add mayo to both slices of bread and add your cheese. Place the tomato slices on top of the cheese. Sprinkle with salt and pepper to taste over the tomatoes. Heat a frying pan to medium low heat and add a dab of butter to the pan to deter sticking. Grill the sandwich for a few minutes on each side until light brown. Enjoy!

Oh I love tomato sandwiches!! I am from the south too though. Although we are a Kraft Mayo family or were. I tried Duke's not too long ago and love it. Now that is what I buy. We don't grill ours though. I can't wait till we start getting some tomatoes from the garden. They are so much better than the store's.

I live off of tomato sandwiches in the summer. I may just have to give your version a try. I love tomato biscuits too.

My brother died recently and one of our last conversations was about how my grandpa would take him to do fence work when he was 11. He said more often than not their lunch was a tomato and salt. I have also noticed Southerners mix tomatoes and macaroni. Grandma and I just went to buy our first tomato plants of the year today.

I'm a southerner and tomato sandwiches are probably my absolute favorite food. However, we do ours with fresh bunny bread, no toasting/grilling. I prefer Kraft mayo and you need lots of salt and pepper. No cheese!
