Easy Broccoli and Cheese Quiche for Toddlers {recipe}

Looking for a way to sneak in the veggies?  Here is a simple recipe that Davis seems to enjoy.  We need all the help we can get for him to eat!  I stumbled across this recipe by accident.  I was actually trying to create something different altogether, but the end result turned out great for us.

Easy Broccoli and Cheese Quiche for Toddlers and Kids


Ingredients:
1 medium Potato, cooked, peeled and cubed
1 Cup Broccoli Florets, cooked
1/2 Cup Cheddar Cheese, shredded
1 cup Panko Bread Crumbs
1/2 Tsp Salt
1 Large Egg
1/4 Tsp Garlic Powder

Preparation:
Preheat the oven to 350 degrees.  Place potato and broccoli in a food processor and blend until smooth.  Mix the potato/broccoli mixture with the rest of the ingredients.  Spray the inside of a casserole dish and spread the mixture evenly into the dish.  Bake for approximately 45-60 minutes.  You should be able to slice this into bite sized pieces for little ones like we did.

    I have everything on hand but the panko crumbs. Do you think this would work with regular bread crumbs? Sounds yummy!

    @Lori B

    I think you could definitely use regular bread crumbs, but you may want to add a cup and a half to make sure you get a good thickness for baking. Let me know how it turns out!

    I tried this but with more potatoe and about 1/4 cup of green bell pepper. Didn't have any broccoli like I thought i did. But it actually turned out really good too. I did add about 1/2 egg more to it as well. Very yummy, cant wait to try it with broccoli soon! Thanks for posting!
