For those of you who know me, you are well aware that eggs are our “go-to” food. Not only are they a great source of protein, but they are affordable and extremely versatile. So, when I was asked to be a part of this 10 Day Breakfast Swap challenge to replace cereal with eggs for breakfast, it just made sense for our family.
On any given day you will see eggs or a recipe that includes eggs on our weekly menu. I try to plan out 7 meals per week in order to save on sanity and our grocery bill. So far it is really working (more on that in a few weeks). Above the savings cost, I love the health benefits. It is an extremely easy way to provide much needed protein to our diets and a great way to keep those busy little bodies filled with energy daily. I have found that on the days we have served eggs versus cereal at breakfast, the boys stay full longer and enter the whiny/tired stage a lot later in the day. Because we love eggs so much, I purchased a toaster that steams eggs on the top while you toast (it has been such a time saver)! Saute some onions and red and green peppers… add them to the eggs that are already cooking… sprinkle in garlic salt, pepper, and parmesan cheese… add some shredded mozzarella and pepperjack… spicy cheesy scrambled eggs!
