There is always yummy Guacamole Dip:<br /><br />GUACAMOLE DIP <br /><br />2 avocados, peeled<br />1/3 cup onion, chopped<br />1/2 jalapeno chile pepper, chopped fine<br />1 medium tomato, peeled and quartered<br />1 tablespoon lime juice<br />1 1/4 teaspoons sugar<br />1/4 cup sour cream<br /><br />Prepare all ingredients. Place the avocados, onions, jalepeno, tomato, and lime juice in a food processor and process on pulse till blended. Add sugar and sour cream and mix well. YOur sandwich looks delish and I am sure i will try it. I do avocados several ways. I love guacamole and make it often. I also make an avocado cream that is just avocados and sour cream with a little lemon and salt/pepper. I like eating avocados smushed in white rice. I love avocados with tortillas and cheese.
